Red Currant Glaze For Cornish Hens

ingredients
2/3 cup pan drippings from Cornish hens
3 tablespoons flour
1 cup white wine
1 cup red currant jelly
1 teaspoon dry mustard
directions
After roasting Cornish hens, remove from pan.
Measure and add back the drippings in the pan and place on a burner over medium heat. Gradually add flour to make a smooth paste.
Add white wine, red currant jelly, and dry mustard, then season to taste. Stir and bring to boil. Reduce heat and simmer until thickened.
