ingredients
1/4 cup butter
1/4 cup all-purpose flour
2 cups milk
1/2 teaspoon salt
1/8 teaspoon white pepper
2 egg yolks
1 tablespoon whipping cream
1/4 cup shredded Swiss cheese
directions
Melt butter in a heavy 2 quart sauce pan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt and pepper.
Beat egg yolks until thick and lemon colored; stir in whipping cream. Gradually stir about 1/4 of hot mixture into yolks; add to remaining hot mixture and cook, stirring constantly, until thickened about 2-3 minutes. Add cheese; stir until melted. Remove from heat.
