ingredients
2 tablespoons butter
3 ounces prosciutto, diced (or ham)
1 carrot, chopped
1 onion, chopped
1 sprig fresh flat-leaf parsley
6 black peppercorns
1 whole clove
1 1/2 quart vegetable stock
salt
directions
Melt the butter in a pan. Add the prosciutto, carrot, onion, parsley, peppercorns, clove and cook over medium heat, stirring occasionally, for about 5 minutes.
Add the stock and season with salt to taste. Cook for about 45 minutes.
Pour through a strainer into a bowl or sauce boat. This sauce should be served hot; you can reheat it in a double boiler if necessary.
