Of course this diablo sauce has a devilish kick to it, but it's more than just spicy for the sake of spicy. Steak sauce and a generous splash of liquid smoke give the sauce a depth to back up the fiery heat and make it perfect for grilled meats.

serves/makes:

ready in:
  under 30 minutes

ingredients

1 bottle (16 ounce size) plain ketchup
1/2 cup white corn syrup
1/4 cup red wine vinegar
2 tablespoons A-1 steak sauce
8 drops Tabasco sauce, or more if desired
1 1/2 tablespoon liquid smoke
1/2 teaspoon garlic powder
1/2 teaspoon dry mustard
black pepper, to taste
Worcestershire sauce to taste

directions

Combine the ketchup, corn syrup, red wine vinegar, A-1 sauce, and Tabasco in a saucepan over medium heat. Stir well.

Add the liquid smoke, garlic powder, dry mustard, black pepper, and Worcestershire sauce. Mix well.

Bring the mixture just barely to a boil, then reduce the heat to a low simmer. Let the sauce cook for 5-10 minutes or until slightly thickened.

Remove the pan from the heat and let it cool slightly before using. Or, let it cool completely before storing it in an airtight container in the refrigerator.

recipe tips

Use a high-quality ketchup for a better flavor base, as differences in quality can significantly affect the taste of the sauce.

Try adding fresh herbs like cilantro or parsley for a fresh twist when serving.

For a smokier flavor, increase the amount of liquid smoke or use a smoked ketchup or mixture of ketchup and barbecue sauce.

To bring out the tanginess, add a squeeze of fresh lime or lemon juice before serving.

If the sauce is too thick, add a splash of water or vinegar before serving.

Create a spicy marinade by combining Diablo Sauce with oil and marinating meats for a few hours before cooking.

common recipe questions

What is Diablo Sauce?

Diablo Sauce is a spicy, tangy sauce made from a base of ketchup, combined with sweet white corn syrup, vinegar, steak sauce, and seasoning to create a flavorful condiment often used for grilling or as a dip.

Can I adjust the heat level?

You can adjust the heat level by adding more or fewer drops of Tabasco sauce or by using a hotter sauce if you prefer an extra kick.

What can I serve with Diablo Sauce?

Diablo Sauce pairs well with grilled meats (particularly sausages), chicken wings, burgers, and can even be used as a dipping sauce for fries or onion rings.

Can I substitute the ketchup in Diablo Sauce?

You can substitute ketchup with homemade tomato sauce or even barbecue sauce, though note that flavors will differ. Using a low-sugar ketchup can also reduce sweetness.

How should I store the sauce?

The sauce should be stored in a sealed container in the refrigerator to maintain freshness and can be used for up to two weeks.

Can the sauce be frozen?

Yes, it can be frozen. Just make sure it's in a freezer-safe container or bag, and it can last for up to 3 months. Let thaw in the refrigerator before using.

Can I add more spices to my Diablo Sauce?

Feel free to experiment with spices like cayenne pepper, smoked paprika, or onion powder.

How do I know when the sauce is ready?

The sauce is ready when it has thickened slightly, which usually takes about 5 to 10 minutes.

Do I need to use liquid smoke in the recipe?

Liquid smoke adds a unique flavor, but if you don't have it, you can skip it or add smoked paprika as an alternative.

What is the purpose of white corn syrup in the recipe?

White corn syrup adds sweetness and helps balance the acidity from the vinegar, giving the sauce a smooth texture and glossy finish.

Can I make it without A-1 steak sauce?

Yes, if A-1 is not available, you can substitute it with a similar steak sauce or a combination of soy sauce and a bit of sugar.

tools needed

Measuring Cups and Spoons: For measuring the various ingredients like corn syrup, red wine vinegar, steak sauce, and liquid smoke.

Saucepan: For heating the mixture on the stovetop until it reaches a simmer.

Heat-Resistant Spoon or Spatula: For stirring the ingredients in the saucepan during the cooking process.

Storage Container: To store the finished Diablo sauce, a clean bottle or jar with a lid is recommended for refrigeration or future use.

what goes with it?

Grilled Sausages: Drizzle the Diablo sauce over grilled sausages for a zesty kick that complements the savory, smoky flavors of the meat. The sweetness from the ketchup and corn syrup balances well with the charred exterior of the sausage.

BBQ Ribs: Use Diablo sauce as a glaze for BBQ ribs. The combination of tomato, vinegar, and spices creates a rich, tangy coating that enhances the meat and adds an extra layer of flavor and moisture.

Pulled Pork Sandwiches: Spread Diablo sauce on pulled pork for sandwiches to add a sweet and spicy dimension. The sauce's heat can cut through the richness of the pork.

Chicken Wings: Toss fried or baked chicken wings in Diablo sauce for a fiery twist. The sauce sticks well to the skin, providing a flavorful, sticky sweetness with a bit of heat.

Meatball Subs: Use Diablo sauce to top meatballs in a sub for a hearty sandwich option.

Dipping Sauce for Fries: Serve Diablo sauce as a dip for fries or sweet potato fries. Its sweet and tangy profile will give the plain potatoes a burst of flavor.

Glaze for Grilled Vegetables: Brush Diablo sauce on your favorite vegetables before grilling. The sugar will caramelize on the grill, bringing out the natural sweetness of the veggies while adding a layer of flavor.

Topping for Pizza: Use Diablo sauce as a base sauce for a spicy pizza. The combination of flavors can stand up to toppings like pepperoni or spicy sausage.

Taco Filling: Incorporate Diablo sauce into ground beef or turkey for a spicy taco filling. The sauce will add moisture and flavor, improving the overall taste of the dish.

Marinade for Shrimp: Use Diablo sauce as a marinade for shrimp before grilling or sauteing. The acidity from the vinegar helps to tenderize the shrimp while adding a smoky flavor.
