1 tablespoon oil
2 medium yellow onions, sliced
4 cloves garlic, sliced
1 teaspoon sugar
25 fresh habanero peppers, seeded for a milder sauce
4 tablespoons vinegar
4 tablespoons limeade concentrate
2 tablespoons vodka
4 tablespoons Coleman's dry mustard
3 teaspoons salt
3 teaspoons ground allspice
Heat the oil in a skillet over medium heat. Add the onions, garlic, and sugar. Cook, stirring frequently, until browned and caramelized. Transfer the onion mixture to a food processor.
Add the remaining ingredients to the food processor. Process until the sauce is smooth.
Transfer the sauce to a covered container and store in the refrigerator for up to 1 week.

Very spicy but has a unique flavor with the lime and mustard. Used it on fish.
