Ingredients: 2 tablespoons butter or margarine 4 eggs, beaten 1/2 cup shredded provolone cheese 2 cups thinly sliced steamed broccoli
Directions: Melt the butter in a large skillet over medium heat. Tilt to evenly coat the pan with the butter.
Add the beaten eggs and tilt the pan to distribute them evenly. Let cook over medium heat until just about set.
Add the broccoli and cheese evenly. Cover the skillet with a lid and let cook until set.
Turn the omelet out onto a serving plate and flip one side over to cover the filling. Serve immediately.
