Ingredients: 1 pint cooked black eyed peas bacon drippings 1/2 pound ground beef, or sausage 1 large onion, chopped 1/4 teaspoon garlic powder 1 can (15 ounce size) diced tomatoes, undrained 1 can (15 ounce size) whole kernel corn, drained 1/2 cup sliced black olives 1/4 cup diced green chiles salt and pepper, to taste 1 package (6 ounce size) cornbread mix, plus ingredients to prepare
Directions: Preheat the oven to 400 degrees F.
Saute the black eyed peas in a small amount of bacon drippings in a skillet over medium heat. Set aside.
In another skillet over medium-high heat, brown the ground beef with the onion. Cook, stirring frequently, until cooked. Drain off any excess grease. Combine the ground beef, black eyed peas, garlic powder, tomatoes, corn, olives, chiles, and seasonings to taste.
Transfer the mixture to an 8x8 baking dish.
Prepare the cornbread mix as directed on the package. Spread the cornbread batter over the top of the black eyed pea mixture.
Place in the oven and bake at 400 degrees F for 20 minutes or until the cornbread layer is golden brown (follow package directions for cooking time).
Remove from the oven and let stand for 5 minutes then serve.
