Ingredients: 4 green tomatoes, cut into 1/4" slices 3/4 cup onion, chopped 1 lemon, juice and zest of salt, pepper and sugar, to taste Japanese breadcrumbs (panko), as needed 2 tablespoons butter, cut into tiny pieces
Directions: Place a layer of tomatoes in a sprayed baking dish, sprinkle with onions, lemon peel, salt, pepper, sugar and breadcrumbs.
Continue layers until all tomatoes are used up sprinkle with lemon juice, top with more breadcrumbs and dot with butter.
Bake at 400 degrees F for 1 hour.
