
Italian Baked Haddock

1/4 cup butter
1 small onion, chopped
1 green bell pepper, chopped
1/4 teaspoon dried basil, crumbled
1 can (14.5 ounces) tomatoes, drained, chopped
salt and pepper
1 1/2 pound haddock fillets
2 cups grated mozzarella cheese
Heat oven to 350 degrees F. Grease 9-inch glass baking dish.
For Sauce: Melt butter in heavy large saucepan over medium-high heat. Add onion, bell pepper and basil. Saute for 10 minutes, or until vegetables are tender.
Stir in tomatoes. Season with salt and pepper. Cook, stirring constantly, for 5 minutes, or until sauce-like.
For Fish: Arrange fish in prepared dish. Pour sauce over. Sprinkle with mozzarella. Bake for 25 minutes, or until fish is cooked through and top is golden.
