Asian Spring Rolls
Spring rolls are similar to an egg roll but are smaller and more delicate. They are also considered more "authentic" than egg rolls. In Vietnamese and Thai versions they are made with a rice paper wrapper, but often in Chinese versions you find them in a thin dough wrapper made from flour and water. They are either deep fried until golden brown, or steamed until tender.
Spring rolls are a traditional appetizer served at Chinese New Year celebrations. They are named as such (chun juan in Chinese) because the holiday coincides with the first day of the lunar year's spring. They are symbolic in the celebration because they resemble a bar of gold, in hopes for good fortune in the new year.
