April 4th is National Cordon Bleu Day. Traditional cordon bleu is a French adaptation of Austria's Wienerschnitzel, a breaded and chicken-fried slice of veal or pork, which the French roll and stuff with ham and cheese--with delicious results! In the US, chicken cordon bleu is a widely eaten version of this "blue ribbon" recipe!
