From Scratch

I used to make a lot of things from scratch. Homemade salad dressings, seasoning blends, pasta from scratch - you know, all the things that you can also buy premade, but that are better made at home.

What's interesting is that when I used to make things like those from scratch was when I was working a full time job, going to graduate school full time, AND running CDKitchen. I'm not sure how I had the energy or time to do it all. Now, it seems I rarely do it if I can purchase a good quality pre-made product instead.

This week I needed some mayonnaise for some egg recipes we'll be testing. I'm allergic to GMO soy so I usually avoid the mayonnaise brands that use soybean oil. We don't use a lot of mayo but I've been buying one made with canola oil (which is GMO, but I'm not allergic to it) when we needed it. Of course, this week I discovered that the store I normally shop at no longer carries that version. I thought, I could drive to another store to see if I could find something else - or - I could make it myself  

I chose the latter.

And since I was feeling all industrious for choosing to make it myself, I decided to see what else I could make from scratch this week  

As I was clicking around CDKitchen (I like to use the "surprise me" button to give me inspiration), I came to a recipe for homemade pepperoni. Now, I've done some "homemade" meats before like breakfast sausage, but never pepperoni. On my list it went!

I liked the recipe because it didn't contain any ingredients I didn't already have on hand. It's made from just plain ol' ground beef and some spices. Easy  

You essentially just combine it all, let it sit overnight in the fridge, then "dry" it in a 200F oven for 4 hours.



The texture was a little grainier than commercially made products but the flavor was dead on. I might have over cooked it so that could be the reason for the texture being different. It was still very good  

I should have lots of yummy food photos and reviews coming up in April as we have two back-to-back taste testing events scheduled next weekend! I can't wait! Also, just a heads up that Foodie Friday is going to be delayed this week. Now would be a good time to catch up on any previous Foodie Friday editions that you might have missed.
