A tasty fresh salsa made with tomatoes, green onion, bell pepper, jalapeno, and cilantro and served with festive blue corn tortilla chips.

Fennel has a licorice flavor to it which makes it unlike a lot of other vegetables out there, especially green ones. Its unusual flavor makes it a fun ingredient to work with. This salsa is so light and refreshing and makes the perfect summer snack. With cucumber, fennel, and avocado it is also packed full of vitamins and nutrients too.

This salsa will work with any stone fruit, but nectarines are my favorite. They’re usually sweet, even when still a bit firm, which I prefer texturally over a perfectly ripe piece of fruit. Having said that, if you do have a few peaches to use up this summer, this is something to keep in mind.

There’s just something about the combination of lightly sweet blueberries and decadent, creamy avocado.

Today’s recipe is the spring recipe for radish salsa (and shows you just how far I can deviate from a base recipe). This definitely isn’t the traditional salsa that you would dip chips into (I might dip some pita chips mothered but I find this radish salsa perfect for topping tacos, quesadillas, morning eggs, or even mixed into a salad. The flavors are straight-forward and a great way to use up those spring radishes that might be lingering in your refrigerator.

While green salsas are often more mild than red ones, this recipe lets you control the heat to your personal tastes. If you like it hot, use a hotter serrano pepper and leave in the seeds. If you like more mild salsas, remove the seeds and/or use a milder pepper like a jalapeño or anaheim. As long as it’s green it can be used in this recipe.

Mango salsa is great with chips (have you tried cinnamon flavored baked tortilla chips?) but it is a super versatile accompaniment for fish, shrimp, pork, chicken, fried eggs or plain old melty cheese.

It’s easy to make, you just need chopped up fresh tomatoes, chiles, onions, cilantro, some lime juice, and seasonings. Use it as a dip for tortilla chips or serve it with tostadas, tacos, or my favorite, alongside steak and pinto beans.

ith a vibrant flavor and wonderful tartness, this take on salsa verde goes perfectly with grilled whitefish, chicken, or veal. If you like, you can cut the ingredients into larger pieces for a chunkier salad, but here I prefer them finely chopped with heaps of cilantro. If you don’t like cilantro, you can use parsley instead.
