Procrastinating Chicken Wings
by Guest Writer, Valerie Whitmore
So much for my plan of getting back into my cooking routine. Work has still been calling the shots around here, keeping me sequestered in my office for most of the day and night. Dragging myself away from my projects to eat, much less cook, hasn't been easy
I think part of it is that I've lost my motivation to cook. I'm not sure if it's just being so busy, or if I'm maybe burned out. I mean, I've only been testing a new recipe or two nearly every day for the past 10 years... burnout is probably long overdue.
I've had a few recipes repeated on our testing schedule for a couple of weeks now. They keep getting pushed back because I just don't feel like tackling them. I've had to re-purchase ingredients that have gone bad because I keep putting them off. They aren't hard recipes, they aren't bad recipes. I just don't feel like it.
One of the recipes that fell into this category was a simple chicken wings recipe. So simple. I have no idea why I kept putting it off, but I ended up buying chicken wings three times because they went bad waiting for me to cook them. Thankfully wings aren't expensive, but it's not something I like to have to do - and I certainly don't like wasting food.
But I did actually get around to cooking them, and when I did I was happy.
The recipe is for "Mexican" chicken wings, but they are really just hot wings with a hint of Mexican spices
The most work in the recipe is separating the wings/tips/drummies. A sharp knife is all you need and it's done in no time. See? Not a hard recipe if that's the worst of it. The hot sauce mixture has hot sauce (obviously), butter, ketchup, chili powder, cumin, and garlic powder. The hot sauce was really the predominant flavor - so I think I'd up the cumin and chili powder amounts next time, to play up the Mexican flavors more.
I basted the wings several times with the sauce while cooking. It developed a nice saucy coat on them. The amount of the sauce was perfect as well.
They were done pretty much exactly in the time recommended in the recipe (20-25 minutes). I did turn the broiler on for the last couple of minutes just to give them a little extra color for the photos, but you don't need to do this.
I served them with blue cheese dressing (ranch would work great too but I didn't have any) and celery sticks.
They turned out so well that I felt guilty for putting them off for so long
Hopefully I'll find my motivation again soon
