Amaranth, Amaranth Flour
A cereal grain. Contains very minute amounts of gluten and is most often processed into a gluten free flour. A mild tangy, somewhat peppery or nutty flavor. Seed of amaranth plants are used as a native cereal in Central and South America. Any of various plants of the genus Amaranthus having dense plumes of green or red flowers; often cultivated for food. A dark red to purple dye once used for coloring food.
