Definition

Parchment Paper
A heavy, coated cooking paper used to line baking pans and sheets. It's resistant to grease and moisture. It's used to keep baked goods from sticking or to seal in steam while cooking "en papillote"

How to buy it

Parchment paper is most commonly sold in rolls (similar to aluminum foil and plastic wrap). It's also available in "rounds" designed to fit in 8 or 9-inch round cake pans.

Tips for using it

Uncurl parchment paper by pulling it along the flat edge of a counter or table.

Spritz the baking pan or sheet with water before placing the parchment down on it.

Don't have any parchment paper?

Use brown paper or waxed paper in baking pans or cookie sheets, or just grease and flour the pan.
