Oven-Free and Easy Chocolate Fix

That's right folks, no baking involved for this one. This recipe has been listed elsewhere as "Boiled Cookies," but I think that just sounds disgusting. It's great for bachelors who don't have an oven in their apartment, but maybe have a hot plate. It's perfect for last-minute treats for those summer BBQs (although better for indoor buffets so as not to be left in the sun). Complete satisfaction for chocolate lovers, peanut butter lovers, and people who just can't seem to get cookies quite right--this is THE cookie recipe everyone should have.
This was another recipe I got from my mom. She made them for me once and I was totally hooked. After that, it was my request on a regular basis, in between requests for brownies and my other favorite, Rice Krispie treats. It was after she showed me how to make them that I should have looked into a twelve-step program!
When I went away to University of Maryland, Munich Germany for a year (that was all the expensive partying I could take), I was known to make these chocolately bad boys in the middle of the night for me and whoever was still up studying in my co-ed dorm. My "freshman fifteen" turned into the freshman twenty-five in no time due to too many late-night cookie/popcorn/brownie/mac-n-cheese/ramen noodle cramming (literally) nights.
But as an adult, I've learned to moderate my indulgences and believe that you can enjoy high-fat delicacies in small amounts. If I didn't have a daily dose of chocolate, I'd lose my mind! For example, now, with my adult mind and body, a handful of peanut M&Ms is enough; I no longer have to eat a whole king-sized bag of them. My philosophy is that life is too short NOT to enjoy the tastes, smells, sights and sounds you crave. Moderation is the key!
I haven't made these in awhile, but reminiscing about them is bringing on a craving. Hmm, I believe I have a meeting coming up to discuss a new film I'm about to start working on...PERFECT!!


Made with instant oatmeal, peanut butter, sugar, cocoa powder, milk, butter, vanilla extract
Serves/Makes: 36
- 2 cups sugar
- 1/4 cup cocoa powder
- 1/2 cup milk
- 1/2 cup butter
- 1 teaspoon vanilla extract
- 1/2 cup crunchy peanut butter
- 3 cups instant oatmeal
Spread a piece of aluminum foil or waxed paper out on the counter ahead of time.
Combine the sugar, cocoa powder, milk, and butter in a saucepan over high heat. Bring to a boil and let boil for exactly one minute after it comes to a full boil. Remove the pan from the heat.
Stir the vanilla, peanut butter, and oatmeal into the sugar mixture and mix quickly to combine.
Drop the cookie batter by spoonfuls onto the foil or waxed paper. Let cool completely. Store the cookies in an airtight container.

I love these!! In elementary school there were made, poured into a pan and cut into bars. You could be an extra for a nickle! My sister makes them as you do, like cookies, but everyone here calls them "cow-patties"!! hee hee!
