Ingredients: 4 tablespoons butter 1 1/3 cup onions, finely chopped 4 cups chicken broth 1/2 teaspoon salt 1 cup heavy cream 1 cup milk 6 cups peeled carrots, sliced 2 tablespoons dill, finely chopped 1/4 teaspoon cayenne pepper salt
Directions: Heat butter in a kettle and add finely chopped onions. Cook until onion is transparent. Cut carrots into 1/4-inch rounds. Add sliced carrots, chicken broth and 1/2 teaspoon salt.
Bring to a boil and simmer 20 minutes. Pour one half of soup (or less) into a food processor or blender. Mix thoroughly, until blended and smooth.
In a large bowl, combine unblended and blended mixtures. Add cream, milk and finely chopped dill. Add cayenne pepper and salt, to taste. Serve hot or cold.
