
Bacon Wrapped Grilled Shrimp Stuffed With Spicy Cheese

24 extra large raw shrimp, peeled
2 large jalapeno peppers, seeded
12 ounces Monterey Jack cheese
12 slices bacon
Preheat a grill.
Cut the jalapenos and cheese into thin, equal-sized pieces. Slice the bacon into thirds.
Slice the underside of the shrimp down the middle, cutting almost but not all the way through. Insert a slice of cheese and a slice of pepper into the cut portion of the shrimp. Fold the shrimp back together and wrap it in a piece of bacon. Secure the shrimp and bacon with a toothpick.
Place the wrapped shrimp on the grill and cook, turning as needed, until the shrimp are cooked and the bacon is browned (5-7 minutes).
Remove from the grill and serve hot.
