Ingredients: 8 eggs 3 tablespoons cream 1 tablespoon chopped fresh dill 1/2 teaspoon salt 4 tablespoons butter 4 green onions, white and green parts, thinly sliced 6 ounces thinly-sliced smoked salmon, cut into strips
Directions: Add the eggs, cream, dill, and salt to a bowl. Beat well with a wire whisk.
Melt the butter in a skillet over medium heat. Add the green onions and cook, stirring, for 5-6 minutes or until softened.
Add the egg mixture to the skillet. Cook, stirring, for 3-4 minutes or until almost set.
Stir in the salmon and cook for another minute or two or until the eggs reach the desired consistency.
Serve immediately.
