Rice Pilaf With Lime And Cilantro - CDKitchen.com

ingredients

2 tablespoons butter
1 small onion, chopped finely
2 cups long grain white rice
3 3/4 cups vegetable or chicken stock
1/4 cup fresh lime juice
2 teaspoons grated lime peel
chopped fresh cilantro or parsley

directions

Melt butter in large saucepan over medium heat. Add onion and saute until tender, about 10 minutes.

Add rice and stir to coat. Add stock, lime juice and lime peel. Bring to a boil, reduce to a simmer, stir, cover and cook until rice is tender, about 20 minutes.

Remove from heat and let stand 5 minutes. Season with salt and pepper. Transfer to a bowl and sprinkle with cilantro.
