Greek Tomato Pilaf

30-60 minutes
ingredients
2 medium tomatoes, coarsely chopped
2 tablespoons chopped onion
2 tablespoons margarine or butter
2 cups water
1 cup uncooked regular long grain rice
1 teaspoon beef bouillon granules
3/4 teaspoon salt
1/8 teaspoon black pepper
directions
Cook tomatoes and onion in margarine in 2-quart saucepan over medium heat 2 minutes, stirring frequently. Stir in remaining ingredients.
Heat to boiling, stirring once or twice. Reduce heat. Cover and simmer 14 minutes (Do not lift cover or stir).
Remove from heat. Fluff rice lightly with fork, then cover and let steam 5-10 minutes. Serve with grated Parmesan cheese if desired.
