Fresh Tomato Rice Pilaf

ingredients
2 tablespoons salad oil
1/2 cup finely chopped onion
1 cup raw regular long-grain white rice
2 cups canned clear chicken broth
1 1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup butter or margarine
1 clove garlic, crushed
3 medium tomatoes, peeled and sliced 1/2-inch thick
1 teaspoon sugar
directions
In hot oil in a 3-quart saucepan, saute onion until golden, about 3 minutes.
Add rice and stir to mix well. Stir in chicken broth, 1 teaspoon salt and the pepper. Bring to boiling.
Reduce heat and simmer tightly covered for 25 minutes (Do not remove cover during cooking).
Meanwhile, in hot butter in a large skillet, saute garlic for 1 minute. Add tomato slices and saute for 2 minutes on each side.
Combine sugar and the rest of the salt, then sprinkle over tomatoes. Add tomatoes to rice and toss lightly to combine.

This was really a great way to dress up rice. This will also work with brown rice and even instant rice. If you don't have fresh tomatoes on hand you can use canned, diced tomatoes - just drain them really well (and even rinse them gently). Fresh is best, but canned will work in a bind.
