The name, vodka, comes from the Russian phrase zhiznennaia voda, or "water of life". It can be made from everything from potatoes to beets. It's considered to be fairly flavorless which makes it a great liquor for mixed drinks.
Honey Peach Deep-Dish Pie

ingredients
1 frozen pie crust, 8-inch size
5 cups peaches, ripe, peeled, thickly sliced
2 teaspoons lemon juice
1/3 cup honey
2 tablespoons tapioca, quick-cooking
1/4 teaspoon cinnamon, or nutmeg
directions
Defrost pie crust at room temperature. Use a rolling pin to roll out as thin as possible, so it will cover a 9-inch cake pan.
Combine remaining ingredients and mix well. Spoon into a shallow 9-inch nonstick cake pan. Fold crust in quarters for each handling, then arrange over peaches. Trim off and discard excess pastry.
Press border of pastry to the sides of the pan. Make several slits in the pastry to permit steam to escape. Bake in a preheated 425 degrees F oven about 35 to 40 minutes or more, until crust is golden. Serve warm or chilled.

This turned out great. I did however drain most of the liquid from the peach mixture before pouring it into the crust, and even still it was pretty liquidy. For the crust I used the flaky crust recipe in the book "Tartine."
