Egg Roll Wrapper Chicken Manicotti

ingredients
12 egg roll wrappers
3 ounces cream cheese with chives
2/3 cup ricotta, fresh if you can get it!
1/4 cup shredded asiago cheese
1/4 cup shredded reggianno cheese
3 cups chicken or turkey, cooked and diced
1 cup frozen chopped broccoli, thawed and chopped
1 clove garlic, minced
1 cup sliced fresh spinach leaves
1/2 cup Alfredo sauce
1/4 cup chopped fresh chives
12 slices proscuitto or deli ham sliced thinly
2 cups Alfredo Sauce for topping
1 fresh ball mozzarella cheese, sliced and set aside
For Serving
fresh basil thinly chopped
fresh roma tomatoes sliced

Preheat oven to 350 degrees F.
Filling: Stir all the ingredients except ham/proscuitto slices and fresh mozzarella, tomatoes and fresh basil together in mixing bowl. Set aside.
You will need to work quickly and make sure the egg roll wrappers are as fresh as possible - older wraps tend to get hard to work with.
Spread 1/2 cup of the sauce on the bottom of a 13x9" baking dish.
To roll manicotti: Lay out the egg roll wrapper.
Place a slice of proscuitto or ham slice on each wrapper.
Put approximately 1/3 cups of filling at the narrow end of each wrapper. Roll them carefully as tightly as possible. Place each seam side down in the prepared 13 x 9" baking dish.
Bake at 350 degrees F for 30 minutes. Remove from oven and place slices of fresh mozzarella evenly on the manicotti.
Put back into the oven and continue baking until cheese is browned and bubbly.
Remove from the oven and top with fresh chopped basil and sliced tomatoes.
These also freeze well before or after they are baked. DO not place fresh basil on top if you plan to bake them it will turn black and yukky!
