Baked Flounder With Vegetables

ingredients
6 flounder fillets (6-8 ounce size)
2 tablespoons olive oil
2 tablespoons fresh ginger, grated
1/4 cup soy sauce
2 tablespoons rice vinegar
2 cloves garlic, minced
1/4 cup dry white wine
salt and pepper, to taste
8 cups Chinese cabbage, chopped
3 carrots, julienne cut
1 yellow pepper, seeded and thinly sliced
1 onion, coarsely chopped
directions
Combine olive oil, soy sauce, ginger, rice vinegar, garlic, wine and salt and pepper.
Combine cabbage, carrots, yellow pepper and onion and toss. Pour olive oil mixture over vegetables and toss.
Place flounder in a baking dish lined with aluminum foil with enough foil on the sides to wrap around the fish. Place vegetables on top of the flounder and fold aluminum foil on top of the fish and vegetables.
Bake for 15-20 minutes at 375 degrees F or until fish is white and flaky but still firm. Do not overcook.
