Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

i have made this dish to bring to the last 4 potlucks i've been too and EACH time it was a big hit. i'm really dyslexic though, and so the first time i wrote down the recipe i wrote CREAM OF CHICKEN instead of mushroom so i've never actually tried it with the cream of mushroom. i DEFINITELY recommend trying this recipe, it's SO easy.
