6 medium potatoes, scrubbed
1/8 teaspoon freshly ground black pepper
2 tablespoons onion, minced
2 tablespoons whole wheat flour
1 tablespoon fresh parsley, chopped

Preheat the oven to 375 degrees F.
Shred the potatoes coarsely. Mix with the onion, parsley, pepper, and flour. Shape into patties and place on a nonstick baking sheet. Bake for 30 minutes.
