It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

Filling
1 1/2 cup cottage cheese, sieved
2/3 cup buttermilk
4 eggs
1/4 cup butter, melted
2 tablespoons honey
2 tablespoons sugar
1 1/4 cup self-rising flour
Syrup
3/4 cup sugar
1 teaspoon orange flower water
2/3 cup water
Garnish
orange segments
orange peel strips

Preheat oven to 375 degrees F. Grease an 8-inch-square baking pan and line with parchment paper.
For Filling: Beat cottage cheese, buttermilk, eggs, butter, honey, sugar and flour until smooth. Spoon filling into greased pan. Bake in preheated oven for 35 minutes or until set.
For Syrup: Combine sugar, orange flower water and water in a saucepan. Bring to a boil, reduce heat and simmer until sugar dissolves. While cheesecake is still warm , pour syrup over cake. Cool completely.
To serve, cut cheesecake in small bars. Garnish with orange segments and strips of orange peel.
