  1. Captain Loserman REVIEW:

We love it. Only change we make is about 1/2 the salt and a TS more cayenne pepper.

  2. poppy REVIEW:

for ribs add 2 TBS dark brown sugar, cut back on cayenne pepper

I am new to Cajan cooking and tried the receipt and really loved it. Thank You. Could not have made an authentic Cajan dish without it.

  4. GrauFrau REVIEW:

This is very good. Just wanted to add a little tip - use popcorn salt - it's a finer, almost powdery salt and blends better - but use about one fourth to one third less (a matter of preference) since it compacts much more, otherwise it will come out too salty.

  5. iflyp9 REVIEW:

Actually the real Emeril's Essence does NOT contain Rosemary.

  6. jeannie048 REVIEW:

Emeril's essence also has Rosemary in it.
