Scalloped Eggplant

ingredients

2 cups cooked, cubed eggplant
1/2 cup coarse cracker crumbs
4 tablespoons onion, minced
3 ounces cheese, grated
1 egg, beaten
1/2 cup milk
2 tablespoons margarine or butter

directions

Put eggplant, half of cracker crumbs, onion, and cheese in layers in buttered casserole.

Combine egg and milk; pour over other ingredients. Dot with margarine and sprinkle with remaining cracker crumbs.

Bake at 350 degrees F for 30 minutes.
