Slow Cooker Garbanzos & Couscous

ingredients
1 small onion, chopped
3 carrots, peeled chopped
1 can (15 ounce size) diced tomatoes, drained
1 can (15 ounce size) garbanzo beans, rinsed and drained
1 cup vegetable broth
3 cloves garlic, minced
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/4 teaspoon cayenne pepper
1 1/2 cup cooked couscous
directions
Add the onion, carrots, tomatoes, beans, broth, and garlic to the crock pot. Stir in the spices. Cover the crock pot and cook on low heat for 3 hours or until the vegetables are tender.
Stir in the couscous. Let heat for 15 minutes then serve. Adjust the seasonings as needed at serving time.

My husband made this and it was absolutely delicious! I had the leftovers the next day for lunch at work and it was even better than the night before, with a little parmasean/romano cheese sprinkled on top...yum!! Thanks, Ann

Really yummy and really easy!!! We used a little more couscous than the recipe called for and it turned out really well! We'll definately make this one again!!!
