Ground beef spiced with mustard seed, garlic, and liquid smoke gets quick-cured and baked. Great with crackers and cheese or all on their own.

2 pounds lean ground beef
4 teaspoons Morton's tender quick cure salt
1/4 teaspoon garlic powder
2 teaspoons mustard seed
1/4 teaspoon onion powder
1 cup water
1 teaspoon liquid smoke
Combine the beef, salt, garlic powder, mustard seed, onion powder, water, and liquid smoke in a bowl. Mix well. Cover the bowl and refrigerate for 24 hours. 
 Preheat the oven to 300 degrees F. 
 Divide the beef mixture into thirds. Roll each into a roll and wrap in aluminum foil with the dull side of the foil facing out. Poke holes in the bottom of the foil roll. 
 Place the rolls on the rack in a baking dish or on a broiler pan, with the holes in the foil facing down. 
 Place the dish in the oven and bake at 300 degrees F for 1 hour 15 minutes. 
 Remove from the oven and let the beef sticks cool in the foil. When cool, remove the foil and re-wrap the beef sticks in foil or plastic wrap. Store in the refrigerator (these also freeze well).
