If you are cutting calories then this copycat recipe from Strings Restaurant is a good choice of Alfredo sauce. It uses non-fat milk, arrowroot starch, and non-fat cheese for a tasty but healthy recipe.

1 quart non-fat milk
1 tablespoon garlic salt
2 tablespoons Molly McButter
1/4 cup arrowroot starch
1/4 cup water
1 cup shredded non-fat mozzarella cheese
salt, to taste
white pepper, to taste

directions

Combine all ingredients except for the starch, cheese and water and put into a sauce pan and bring to a boil.

Blend together the arrowroot and cold water then add slowly to the sauce, stirring constantly. Let sauce simmer for 2 minutes.

Remove from heat. Slowly add and blend in the cheese.

    I love alfredo but don't need all those calories. I almost didn't look at thsi recipe because it didn't say lowfat in the title but when I read the ingredients I saw it was. Tastes great for being so low fat.

    This was a wonderful low cal recipe, I just added a little parmasan cheese.

    I modified to suit ingredients I had. Corn starch for Arrowroot. Added some shredded cheddar and parm in addition to the mozz. Liked the fact that this recipee uses milk instead of cream. Added a left over pork chop, red pepper flakes and some steamed broccoli and served over pasta. Came out pretty darn good!
