Need a quick and easy Alfredo sauce? Look no further. This recipe simply uses evaporated milk, Parmesan cheese, and a little white pepper for seasoning.
1 can (12 ounce size) evaporated milk
1 1/2 cup finely grated Parmesan cheese (not pre-shredded)
white pepper
Heat the evaporated milk in a saucepan over medium heat. When hot, stir in the Parmesan cheese and mix until the cheese has fully melted and the sauce has thickened.
Season to taste with white pepper (salt can be added as well but Parmesan cheese is salty so taste the sauce before adding it).
Toss with pasta or use in any recipe calling for Alfredo sauce.
For a richer sauce, you can add a splash of heavy cream or a tablespoon of cream cheese.
To prevent the sauce from curdling, avoid high heat and overcooking.
Toss the cooked pasta in the sauce just before serving to prevent it from becoming too thick.
Try different cheeses like Romano or Asiago for a different twist on the classic sauce.
Regular milk can be used in place of evaporated milk, but the sauce may not be as creamy or rich.
Black pepper can be used as a substitute for white pepper in this recipe. White pepper is used for color, but black pepper will still add flavor.
You can add herbs like parsley, basil, or oregano. Garlic powder or onion powder can also be added.
If the sauce is too thin, you can simmer it longer to evaporate more liquid or add a slurry of cornstarch and water to thicken it.
Pre-shredded Parmesan cheese often contains anti-caking agents that can affect the texture of the sauce. It's best to use freshly grated Parmesan for best results.
Leftover sauce can be stored in an airtight container in the refrigerator for 3-4 days.
While Alfredo sauce can be frozen, the texture may change slightly upon thawing. Freeze for up to 2 months. Thaw overnight in the refrigerator. Stir well after reheating to recombine any separated ingredients.
Reheat the sauce gently over low heat on the stove, stirring constantly to prevent it from separating. You can also reheat it in the microwave in short intervals, stirring in between.
Saucepan: To heat the evaporated milk and melt the Parmesan cheese.
Stirring Spoon or Whisk: For stirring the sauce.
Fresh Pasta: This sauce will pair perfectly with freshly made pasta.

I used skim evap milk and this turned out very good and had lower calories than regular alfredo sauce.

Super easy! I didn't think it would taste like alfredo sauce but it does. The trick is getting the right consistency, you just have to heat and stir until it gets there.

This recipe is suprisingly good! As many people who cook do, I changed it a bit, per previous reviewers suggestions. I sauted 2 minced garlic cloves in a little olive oil before putting the evaporated milk in the pot, and also used maybe 4-5 oz grated parmesean and a handful of shredded mozzerella to thicken. Used a wisk to make sure everything was mixed well, and the sauce came out great! Thanks to whoever posted this recipe!

What A HIT! This recipe is delicious and so simple! I did saute a clove of garlic in tbs of butter first then stir fried some seafood with a little lime juice and threw in some frozen broccoli as well. To thicken the sauce I used some corn starch and mixed it altogehter with some wheat thin spaghetti! A great meal my family loved it. YUM!!

Super Easy and super yummy! I love Alfredo Sauce, but rarely take the trouble to make it, kitchens and I don't always get along. But even I was able to put this one together. I did saute some garlic in butter first, for some added flavor. (Great Tip) Works awesome as a breadstick dip as well! Thank You

Excellent sauce! I fried shrimp and mushrooms with a bit of butter and fresh garlic and added it to the sauce. My boyfriend who keeps telling me he doesn't like the canned alfrado sauce loved it (and yet it was just as easy! :-)

Good basic recipe. Very easy and evaporated milk is a staple in many pantries. Since I like garlic I started this by by frying a few minced cloves in a tbl of butter first. And because I had it added about 1/2c mozzarella at the end. You could probably add any cheese or seasoning you wish and it would work. Took less than 30 min.

This recipe is simple and easy. My family loved it. I made a chicken and brocoli casserole. Next time I am going to use shrimp instead of chicken.
