It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Baked Asparagus Patties

ingredients
1 tablespoon butter or margarine
1 1/2 tablespoon all-purpose flour
1 cup milk
1 egg yolk
1/2 teaspoon salt
1 pinch red pepper
1 can (15 ounce size) asparagus spears
2 cups fine dry breadcrumbs
directions
Drain and cut asparagus into 1/2-inch pieces.
Melt butter in a heavy sauce pan over low heat, then add flour, stirring until smooth. Cook for 1 minute, stirring constantly.
Combine milk and egg yolk, stirring well. Gradually add to flour mixture. Cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt, pepper, onion juice, and asparagus pieces. Chill mixture thoroughly.
Shape into patties, using about 1/4 cup mixture for each. Roll patties in breadcrumbs and place on an ungreased baking sheet.
Bake at 350 degrees F for 20 minutes or until tops are golden brown. Turn and bake an additional 5 minutes.
