1 can (20 ounce size) crushed pineapple, drained
1 package (3.4 ounce size) instant lemon pudding mix
1 carton (8 ounce size) frozen whipped topping, thawed
1 prepared graham cracker pie crust
Combine the crushed pineapple and pudding mix in a bowl and stir until completely mixed and it starts to thicken.
Fold the whipped topping into the pineapple mixture. Spoon the pie filling into the pie crust. Place the pie in the refrigerator for 2 hours or until ready to serve (can be held in the fridge for up to 8 hours).

I give this recipe a 5 for simplicity and great fresh lemony flavor. I added lemon zest and a lemon twist for added flavor and color and eye appeal. Easy to put together, great recipe for a child who likes to cook. I even forgot to drain the pineapple, and it still turned out good!
