Maraschino Cherry Cream Pie

A creamy maraschino cherry filling topped with a fluffy egg white meringue. The perfect pie to make any time of the year.

ingredients

3/4 cup sugar
3 eggs, separated
3 tablespoons all-purpose flour
2 cups milk
1 cup maraschino cherries, drained and chopped
1 tablespoon melted butter
1 (9-inch size) pie shell, blind baked
3/4 cup sugar

directions

Preheat the oven to 400 degrees F.

Combine the egg yolks, first measure of sugar, flour, and milk in a saucepan over medium heat. Whisk well until the mixture is uniform in color.

Add the cherries and melted butter. Cook, stirring frequently, until the mixture is very thick. Remove the pan from the heat and let cool completely.

Fill the pie shell with the cooled cherry mixture.

Place the egg whites in a bowl and beat with an electric mixer until stiff peaks form. Add the remaining sugar while continuing to beat the eggs.

Spread the meringue evenly over the cherry filling. Place the pie in the oven and bake at 400 degrees F until the meringue is lightly toasted, about 10-15 minutes.

Remove the pie from the oven and serve immediately, or chill until ready to serve.
