Italian Sweet Easter Pie

ingredients
Crust
2 eggs
1/8 cup vegetable oil
1/8 cup butter or margarine
3/4 cup sugar
1/8 cup vegetable shortening
1/8 teaspoon salt
3/4 teaspoon anise or lemon or vanilla or almond extract
1 1/4 cup flour (or more to make a stiff dough)
Filling
1 1/2 pound ricotta cheese
1 package (8 ounce size) cream cheese, softened
4 eggs, separated
1 cup sugar
1 large can crushed pineapple, drained (optional)
1 orange, zest of, grated
1 lemon, zest of, grated
1/2 teaspoon cinnamon
1 teaspoon vanilla extract
1 cup cooked rice (optional)
directions
Preheat oven to 350 degrees F.
Blend ricotta cheese with cream cheese.
Beat 4 egg whites till stiff. Fold into cheese mixture. Add remaining ingredients. Mix well. Pour into pie shell.
Bake for at least 30, but not more than 45 minutes. Cool.

Tonight I made this recipe for the first time, and it was absolutely delicious!! I was unable to locate my grandmother's traditional recipe of our Italian Sweet Pie from about 80yrs ago, I was so disappointed.. Especially because I was baking at friends home tonight,as we do every year, and this year it was my turn to share an old favorite traditional recipe.. But when I searched and found this particular recipe I was thrilled, it sounded very close to the one I once remember.. so I gave it a try!! It went over so well we ended up making 4 pies!! Absolutely delicious in texture , flavor and very accurate with ingredients and with cooking time!! we did not use the options for pineapple or for the rice, instead we kept it simple and WOW it was like grandma was in the kitchen!!! A big thank you to whomever created this recipe,you really saved the day and now I will be using this recipe as my new Easter tradition... Lisa : )
