3 tablespoons soy sauce
2 tablespoons lemon juice
1/4 teaspoon curry powder (or to taste)
1/8 teaspoon black pepper
1 clove garlic
1 pound boned, skinned chicken breasts
2 tablespoons corn oil
Peanut Sauce
1 teaspoon corn oil
1/4 cup chopped onion
1/2 teaspoon fresh ginger root, minced
1/2 cup peanut butter
1 cup water
1 tablespoon soy sauce
directions
In small bowl, stir together soy sauce, lemon juice, curry powder, pepper and garlic. Cut chicken in 1" cubes Add chicken to marinade and toss to coat. Marinate 30 minutes, stirring occasionally.
Rinse bamboo skewers in water. Thread with chicken pieces and brush with oil. Broil 6" from heat about 5 minutes, until tender, turning occasionally. Serve with Peanut Sauce.
For Peanut Sauce: In 1 quart saucepan, heat oil over medium heat Add onion, ginger and pepper. Cook, stirring frequently, 1 minute. Stir in peanut butter. Gradually stir in water and soy sauce until well blended.
Bring to boil, stirring constantly until sauce thickens. Serve hot or room temperature.
