ingredients
2 tablespoons olive oil
3 cloves garlic, minced
1 small onion, finely chopped
2 cans (14 ounce size) chicken broth
2 cups uncooked orzo pasta
directions
Place a saucepan over medium to medium-high heat. When hot, pour in olive oil. Add onion and garlic, then cook and stir for about 3 minutes (or until tender).
Pour in chicken broth, and stir and scrape the bottom of pan. When broth begins to boil, stir in orzo. Reduce heat to low. Cover pan and simmer for 15 minutes, or until pasta has absorbed all the liquid (stir occasionally to prevent sticking).
Season with salt and pepper before serving, if desired.
