Mexican Cornbread Casserole With Cheesy Chorizo Filling

CORNBREAD
1 cup yellow cornmeal
2 eggs, well beaten
1/2 teaspoon baking soda
1/2 teaspoon salt
15 ounces canned cream style corn
1 cup milk
1/2 cup bacon drippings
FILLING
1/2 pound ground beef
1/2 pound chorizo sausage
1 medium onion, finely chopped
1/2 pound grated Cheddar cheese
2 jalapeno peppers, deveined & minced
directions
Brown the ground meat, drain.
Place a thin layer of corn meal mixture in a baking dish. Add even layers of meat, onion, cheese and peppers.
Pour the rest of the corn meal mixture over all and bake at 375 degrees F. for one hour, or until brown.
