Slow Cooker Mexican Hamburger Casserole

ingredients
1 pound ground beef
3 cups corn chips
1 medium onion, chopped
1 can (10.75 ounce size) cream of mushroom soup
1 can (10 ounce size) Rotel diced tomatoes with green chiles
2 cups grated cheese
directions
Brown ground beef and drain off fat. Mix well with mushroom soup and tomatoes.
Line bottom of slow cooker with 1 cup of corn chips. Add 1/3 of onion, sprinkle with 1/3 of grated cheese and add 1/3 of meat mixture. Repeat layers, cover and cook on low 6-8 hours or on high 3 hours.
You may also bake in a casserole at 325 degrees F for 45 minutes.

I don't care for green chilies so I just used regular diced tomatoes. I liked the corn chips in this. My kids thought it was excellent.

While my dear wife is not usually very adventuresome with new recipes, she LOVED this one. She also said that it might be good with chopped chicken as well. I did some south Texas additions though, added 2 tbs chili powder, 1/2 tsp each of cumin and garlic salt to the browning burger. I also topped it with shredded cheese, two finely chopped green onions and a dusting of paprika

A little spicy, but boy was it good. Everyone enjoyed it and sister even took it to a potluck with rave reviews on it. Talk about simple.
