1/2 pound sharp white Cheddar cheese
1/2 pound extra-sharp Cheddar cheddar
1 jar (7 oz size) pimentos, drained and finely chopped
1/2 teaspoon black pepper
cayenne pepper, to taste
2/3 cup mayonnaise

directions

Finely grate cheeses into a large bowl. Stir in pimentos, black pepper, cayenne, and salt to taste with a fork. Then stir in mayonnaise, mashing mixture with fork until relatively smooth. (It should be flecked with small pieces of pimento.)

Chill to allow flavors to develop.

    This is truly the BEST pimento cheese I have ever made. I did grate the cheese on a wide grate and add a little more cayenne than called for, but we like our pimento cheese chunky and with a bite, lol. It was super easy to make and even tastes great before the flavors have time to blend. Let it sit for the suggested 2 hours and it is DIVINE!!!! Absolutely a 5+ stars!!!
