Greek Onion Soup

ingredients
2 tablespoons olive oil
2 onions, chopped
2 cloves garlic, chopped
1 potato, chopped
1 teaspoon salt
1 pinch ground black pepper
3 bay leaves
1/2 teaspoon marjoram
1 cup yogurt
2 pints stock
1 tablespoon chopped parsley
directions
Heat oil in a pot and gently fry the onion for 2 minutes. Add garlic, potato and seasonings. Stir together. Add yogurt and mix well.
Pour in stock. Bring to a boil, cover and simmer for 20 minutes.
Garnish with chopped parsley.

Kinda bland. I'd maybe use cream next time instead of yogurt for a richer flavor and just stir it in at the end to heat through. It didn't say what kind of stock but I assumed chicken so maybe it was supposed to be beef stock which would be richer.
