Keeping a can of frozen orange juice concentrate in the freezer means you can make more than just orange juice. Try it in a variety of orange-flavored recipes.
Patty Pan Lasagna

ingredients
1 large squash, scallop, sliced 1/4" thick
8 ounces spaghetti sauce
8 ounces cottage cheese, 2% fat
1/2 cup shredded mozzarella cheese
1/2 cup shredded Parmesan cheese
directions
Slice patty pan or scalloped squash 1/4 inch thick. Lightly salt to reduce water in squash at least an hour a head of making this dish, then drain.
Spray 1 1/2 qt. square baking dish lightly with Pam-type spray. Layer sliced squash in baking dish. Spoon spaghetti sauce on top of the squash. Top with cottage cheese, sprinkle of mozzarella and Parmesan cheese. Repeat 2 more times ending with cheeses.
Bake at 350 degrees F for 1 hour.

You can use zucchini sliced lengthwise (like lasagna noodles).
