Meatless Lasagna

ingredients
10 lasagna noodles, cooked and cooled in cold water
2 medium onions, chopped
4 cloves garlic, chopped
3 tablespoons oil
2 cups tomato or spaghetti sauce
2 teaspoons oregano leaves
1 teaspoon dried basil
1 tablespoon dried parsley (or fresh)
2 teaspoons salt
2 cans mushroom pieces and stems (or fresh)
1 cup canned drained kidney beans
3/4 pound sliced or shredded mozzarella cheese
2 cups cottage cheese
1/2 cup grated Parmesan cheese
directions
Saute onions and garlic in oil. Stir in tomato sauce and spices. Cook the sauce for about 15-30 minutes. Stir in mushroom and beans.
To assemble, add 4-5 noodles, half of the sauce, half of the cottage cheese, half of the mozzarella cheese and half of the Parmesan cheese. Repeat layers in order given.
Bake at 375 degrees F for 20-30 minutes.
