Creamy Tortilla Soup

ingredients
1 pound lean ground beef
1 large onion, chopped
1/4 cup butter or margarine
1/3 cup flour
1 envelope (1.25 ounce size) taco seasoning mix
4 cups beef broth
2 cups milk
1 can (15.5 ounce size) red kidney beans, drained
1 can (14.5 ounce size) tomatoes or salsa*, undrained, cut up
1 cup Monterey jack/Mexican blend cheese, shredded
crushed taco chips
sour cream
directions
Cook together ground beef and onion until meat is brown and onion is tender. Drain off fat.
Melt butter. Stir in flour. Add taco seasoning mix, beef broth and milk. Cook and stir until thickened and bubbly.
Stir in beans, undrained tomatoes and meat mixture. Heat through, add cheese; stir over low heat until cheese melts.
Put corn chips and sour cream on top after ladling into soup bowls.
*I use Ro-Tel.

I made this for my husband and I last night. WE LOVED IT! The only different thing I did was use Hot Ro-tel. It was the perfect ammount of spice. I will be making this quite often! Thank you!!

This is the best tortilla soup recipe I have found so far - I've changed all the beef stuff to chicken instead (using canned chicken and chicken broth). I also use serano and anaheim peppers to give it more spice. Once you make it once, you can tweak it to your needs - it's fantastic!

Great recipe, it was a sure hit for sure! i added some garlic to the mixture...and used more taco seasoning than it called for (i like spicy/zesty flavor!)...it really did turn out awesome, people helped themselves to 2nds and 3rds...~!
