Incredible Split Pea Soup

ingredients
1 package (14 ounce size) mixed split peas (yellow and green)
7 cups water
1 large onion, chopped
3/4 cup finely chopped carrots
1/2 teaspoon garlic powder
1 1/2 cup lean diced ham
salt to taste
cayenne pepper to taste
directions
Sort the peas. Remove any stones or debris.
Rinse the peas, and then put them in a 4-6 quart Dutch oven. Add the 7 cups of water, and bring to a boil. Boil for 2 minutes, then reduce heat to medium low.
Add remaining ingredients, except for the ham, and cook, covered, for about two hours. Peas should be very tender and falling apart.
Add ham, and simmer uncovered for 20 minutes.

This is the easiest and best split pea soup I have ever had, I think it is the cayenne. It can be done as vegetarian by omitting the ham so everyone can enjoy it. Served with biscuits it is my family's favorite comfort food!
