Easy Old Fashioned Split Pea Soup

ingredients
3/4 cup dry yellow split peas
1 1/4 cup water
1 can (10 ounce size) chicken broth, undiluted
1 cup coarsely chopped cooked ham, divided
1/2 cup grated carrot
1/2 cup chopped onion
1/2 cup chopped celery
1 tablespoon butter
1 1/2 cup milk
salt and pepper, to taste
croutons
chopped fresh parsley
directions
Wash peas and place in a large saucepan. Add water, chicken broth, 1/2 cup of the ham, carrots, onion, celery and butter to peas. Bring to a boil.
Reduce heat, cover and simmer 2 1/2 to 3 hours or until peas are tender.
Stir in milk and remaining 1/2 cup ham. Add salt and pepper to taste. Heat to serving temperature. Garnish with croutons and parsley.
